Experience the bold character of Tolo Cellars wine, fermented entirely on wild, or natural, yeast. Winemaker Josh Gibson crafts small lots of wines from grapes grown in ideally situated hillside vineyards west of Paso Robles.
  • Chardonnay

    Relish the deep golden hues, savor the rich scents of toasted vanilla, spiced pear & caramel liqueur, wafting amid the aromas of grandma’s baked bread. But don’t be lulled by the warm coziness: this is a bold, assertive wine that dances with lively flavors of kiwi, tangerine, & crème bruleé as it two-steps over your tongue with a lively flourish. A meaty Dungeness crab would certainly not object to being devoured if offered such an accompaniment. Bottle price: $24
  • 2003 Ária

    The wine intrigues with an opulent bouquet of tobacco leaf, richest blackberries, & pomegranate. The flavors provide a raucous chorus of currants, white pepper, raspberry, berries & more berries, with just a hint of lusty gaminess. It’s a spicy complement to an indulgence filled evening of grilled beast & other delectable morsels drenched in au jus. Olé! A classic Rhone-varietal blend of Grenache, Syrah, Mourvèdre, & Counoise.   • Léros

    There is an ornithological phenomenon in the Adelaida hills whereby birds, woozy after feasting on fermented berries of the native flora, flit about in manic delight over the land’s natural effervescence. This wine, similarly, demonstrates the landscape’s not-so-subtle effects on one’s sensory capacities. A bouquet of unctuous earthiness gives way to delightful notes of chocolate covered cherries, followed by deeper whiffs of plum, cinnamon, Middle Eastern spices and potpourri. Pick your lap of luxury: a sumptuous mud bath, or a ride on the fine grain leather of a Lamborghini. Oh, if men could fly – or if birds could drive?  So, what’s in it?  Syrah, Grenache, Mourvèdre, & Counoise.  Bottle price: $28

  • 2004 Reserve Cabernet Sauvignon

    So, we were sitting around one evening, sucking on Morello cherries & mulling the guilt that comes with knowing life’s deep secrets, ala a Graham Greene novel, when it struck us like a 2-ton truck: This is one heavy wine. And not only because of its deep, blood-red hues. Cassis, currants, sweet essences of tobacco & tea leaves, dark chocolate, & a dash of cinnamon add up to warm, rich indulgence. It’s a good sign that we spend so much time sniffing this wine: the nose knows. On the palate, those Morello cherries come sweetly to mind, layered lightly with vanillin & all-spice. This wine has a restless spirit & a seductive allure. “Cabs can do that to a man,” remarks the smitten suitor. Still, this is the wine you want to sneak in to the show for a surreptitious swirl in the dark. Smuggle the glass in, too, because a Dixie cup just won’t do.  Bottle price: $36
  • 2001 Asíni

    Be practical for just a moment: You’ve always wanted to age a wine, but you never do. Oh, you mean well, & no sooner has that kindly salesperson said, “Lay it down for a few years & you’ll earn your just rewards,” than you have popped the cork for a taste that you so richly deserve! No need to worry here: We cellared this wine 7 years & 4 months before bottling. How utterly impractical! The result is a wine with as much youthful exuberance as a Jonas Brothers entourage. Like the thick cherry compote that jumps off the nose, you want to spread it all over your scones. Think big viscosity, rich red fruits - berries, berries & very cherry – a dollop of cola, dried herbs & sweet leather. How did we arrive at this sock hop? And did we mention this wine is nearly 8 years old?  Bottle price: $45 - Library Wine
  • 2005 Asíni

    Here’s what you get: Lively! Energetic! Fun! Engaging! Think of this wine as the equivalent of your e-harmony match, meeting all 29 (or at least four) of your dimensions of compatibility. A little whiff of rose petal on the nose, followed by a swirl of red licorice and red fruit candy, makes for a nice opening line. But there’s more to this date than perhaps you want to know. It gushes with notes of dark berries, morello cherries, and pomegranate, yet its bright acidity makes for a lively tango on the palate. Heavier on the sangiovese than previous Asini vintages, this wine provides a juicy synergy of serious structure and jammy goodness, not unlike a line of pom pom girls rallying the student body spirit, so to speak. Did we say red sauce spaghetti with spicy Italian sausage? No, we didn’t, but it sounds awesome now that we mention it.  Bottle price: $28

  • 2006 Riza - Sangiovese 'Port'

     There’s a world of doctors, each with a chest full of solutions & antidotes, but none has the good medicine you’ll find in this bottle. This port-style wine jumps about like the crazy life of the party it should be, due in large part to the lively acids that keep its lush fruit rightly in balance. With an exotic bouquet of spiced black cherries, red licorice, smoky paprika, & raspberry liqueur, this dessert wine would best be paired with dark chocolate accented with a dash of salt, or perhaps a bowl of candied nuts. An ideal cure for whatever ails you. Who’d have thought we could find a sweet Italian (varietal) in anything other than sausage? Bottle price: $25 (375 mL) 

  • 2006 Late Harvest Sauvignon Blanc

    There once was a gaucho who perchance rendezvoused with Carmen Miranda in the tall grass of an Argentine pampas…keep that in mind as you delve into the wine tasting equivalent of an intercontinental blending party. The wine opens exotically with a nose of wet grass and hay, pepper, pear and honey. It delights with rich flavors of pineapple, lychee, apricot, and tangerine, all tied together with a wonderfully bright acidity. The earthy grassiness – a classic feature of Sauvignon Blanc – makes us long for the open range, but oh Carmen – what a hat! Not your typical dessert wine, but one filled with adventure, intrigue, and zest. Though notes for this wine haven’t come easily, we’ve tasted many a-time with consistent results: an empty bottle.
